Cake Balls
This recipe is inspired by Bakerella - she created Red Velvet Cake Balls.  But, I am going to be more generic as you can really create any flavor you like.  These are great for parties and other events.  Be warned however, they will be a HUGE hit and you will have to make more!  They are simple to make but a bit time consuming.
 
Ingredients:
1 cake mix, any flavor
1 can of frosting, any flavor
Chocolate Wafers for melting
 
Directions:
  1. Mix and bake cake according to the directions on the box.  Let cool thoroughly.
  2. Crumble cake into large bowl.  Mix in the can of frosting until the cake is moist and you can form balls (I just use my fingers to mix.  Messy yes, but the easiest way I think).  Form into balls, about 2-bite size (this should make around 45 - 50 balls).  Refrigerate for several hours, until very firm (I put mine in the freezer to speed things up).  It is important that they are very cold or you will have a hard time with the next step!
  3. Melt chocolate, a little a time, in a double boiler or microwave.  I found it easier to melt in the double boiler because this stuff hardens fast.  It is much easier to work with when it's hot.
  4. Roll your chilled cake balls in the chocolate and place on wax paper until hard.  Feel free to drizzle chocolate over them and/or add sprinkles etc...
Notes: 
~You can always make your cake and frosting from scratch of course. 
~Feel free to use any combination of cake/frosting.  I made Strawberry w/ strawberry frosting and milk chocolate.  But consider the possibilities!  I saw a recipe that used pumpkin spice cake w/chocolate.  How about using white chocolate?  The wafers come in such pretty colors too so you can really be creative.  When I made the cupcake bites I used white chocolate but added red food color for a pretty pink color.

This is a yummy Pumpkin Pudding recipe I found and thought I would pass it on.  So easy yet scrumptious dessert!
Pumpkin Pudding

~1 (3.4 ounce) package instant vanilla pudding mix

~1 (12 fluid ounce) can  Evaporated Milk

~1 (15 ounce) can Pumpkin

~1 tablespoon pumpkin pie spice

~whipped cream

BEAT pudding mix and evaporated milk according to package directions in large bowl; refrigerate for 5 minutes. Add pumpkin and pumpkin pie spice; mix well. Spoon into dessert dishes. Refrigerate for 10 minutes or until ready to serve. Top with whipped cream.
